I’ve mentioned before that when my husband and I first married, I barely knew how to cook. Burnt pots and tears of frustration were the norm in our parts, and eating out was a “rarity” that we enjoyed about 4 times a week. One place that we visited quite often was a burger joint that served a deliciously creamy and sweet coleslaw along with its meals. I generally am not a fan of coleslaw, but something about the sweetness got to me. I’ve been wanting to recreate the same slaw at home, and a quick internet search gave me exactly what I wanted 🙂 I’ve halved the recipe to serve 4, and the key to is to allow the slaw to marinate for a couple of hours before serving.
Sweet and Creamy Coleslaw
Yield: 4 Servings
- 1/3 cup creamy salad dressing (Miracle Whip)
- ¼ cup sugar
- 1 ½ tablespoons oil
- ½ tablespoon vinegar
- 1/8 teaspoon salt
- 4 ½ cups (1/2 pound) coleslaw mix
In a large bowl, whisk together dressing, sugar, oil, vinegar, and salt. Add coleslaw and mix well. Refrigerate for at least 2 hours prior to serving.
